2023 St Huberts Pinot Blanc Chardonnay This Prized Pig Pinot NoirAfter the sad loss of our beloved Roussanne block (due to phylloxera), we needed something a little left field to fill the void. We ventured out of the Yarra and found a block of Pinot Blanc in Main Ridge on the Mornington Peninsula. The handpicked fruit was whole bunch pressed, and the high turbidity juice was fermented in a stainless steel tank, followed by aging on light lees.
